But with a little preparation, delicious dinners are possible. By cooking a pot of your favourite rice early in the week, these recipes can be prepared in 20 minutes or less; meaning nutritious meals for your family every night.
Spanish Chorizo and Rice Frittata
Made with leftover rice, this 20 minute meal is the perfect solution to a busy weekday calendar. Whether you need to feed your kids before swimming lessons, or require a quick and easy meal for two, this recipe suits every lifestyle. Serve with a mixed green salad for a complete meal.
Two-tone Rice Salad with Shrimp and Feta
This hearty salad is ideal for a crowd and makes great leftovers. The black and brown rice add a source of fibre to every serving and the recipe can be modified to be gluten-free. Simply check the brand of feta and replace wine vinegar with any gluten-free vinegar.
Salmon and Rice Chowder
This delicate and delicious Salmon and Rice Chowder is elegant enough to serve at an afternoon lunch with the ladies but also easy enough to whip together for a quick weeknight meal. Salmon may be substituted for any firm white fish or shrimp to suit different tastes.
Sesame Shiitake Fried Rice
This is a classic way to use up any leftover cooked rice, whether it be short or long-grain, brown or white rice – just be sure the rice you start with is cold. To make this vegetarian, replace oyster sauce with hoisin sauce, or to go in the opposite direction, pick up a hot, roasted chicken or some BBQ pork from the prepared food counter, then chop or shred meat and stir into hot fried rice.
