Chicken Guacamole Rice Salad
- 3 tbsp (45 mL) lemon juice
- 2 tbsp (30 mL) vegetable oil
- 1 tsp (5 mL) granulated sugar
- 1/2 tsp (2 mL) white pepper
- 2 cups (500 mL) cooked brown rice
- 2 cups (500 mL) cubed cooked chicken
- 2 ripe avocados, diced
- 1 green chili pepper, finely diced
- 1 onion, diced
- 1 clove garlic, minced
- In large bowl, whisk lemon juice, oil, sugar and pepper.
- Add rice, chicken, avocado, chili pepper, onion and garlic; toss.
