Honey Rice Muffins
Rice, in addition to flour, is a main ingredient in these versatile muffins. Sweet golden honey shines the tops of these dense muffins, which are perfect to serve with jam or preserves.
| 1-1/2 cups | cooked long-grain brown rice | 375 mL |
| 1/3 cup | butter, melted | 75 mL |
| 1 | egg, beaten | 1 |
| 3/4 cup | liquid honey | 175 mL |
| 3/4 cup | milk | 175 mL |
| 1-2/3 cups | all-purpose flour | 400 mL |
| 1 tbsp | baking powder | 15 mL |
| 1/4 tsp | salt | 1 mL |
In a large bowl, add rice, butter, egg, honey and milk. In separate bowl, sift flour, baking powder and salt. Stir rice mixture into flour mixture until just moistened.
Spoon batter into greased muffin tin, filling cups 3/4 full. Bake in 400°F (200°C) oven 15 to 20 minutes or until golden brown. Remove muffins from tin and cool.
Makes 12 muffins.
