Brunch Rice
Delicious anytime of the day, Brunch Rice is the perfect menu item for a family brunch. Ready in minutes, it is an ideal dish for drop-in visitors.
| 1 tbsp | butter | 15 mL |
| 1/2 cup | diced carrots | 125 mL |
| 1 | large tomato, diced | 1 |
| 1 | green pepper, sliced | 1 |
| 1/2 cup | diced mushrooms | 125 mL |
| 6 | eggs | 6 |
| 4 tbsp | 2% milk | 60 mL |
| Pepper to taste | ||
| 3 cups | cooked U.S. rice | 750 mL |
| Fruit to garnish |
In medium skillet, melt butter; add carrot, tomato, green pepper and mushrooms and cook until tender. Reduce heat.
In small bowl, whisk eggs, milk and pepper. Pour over vegetable mixture in pan. Stir until eggs are almost cooked (about 1 to 2 minutes); add cooked rice and mix with fork. Serve.
