Country Breakfast Cereal
Start the day off right!
This warm mixture of hearty rice, sweet raisins and cranberries accented by fragrant cinnamon and sweet brown sugar is a great start to any morning.
| 1 cup | uncooked brown U.S. rice | 250 mL |
| 1 tbsp | butter or margarine | 15 mL |
| 1/4 tsp | salt | 1 mL |
| 1/2 cup | seedless raisins or dried cranberries | 125 mL |
| 1 tsp | ground cinnamon | 5 mL |
| 2-1/4 cups | water | 550 mL |
| Milk or cream | ||
| Honey or brown sugar | ||
| Fresh fruit or toasted nuts |
In 2- to 3-quart (2 to 3 L) saucepan, combine rice, butter, salt, raisins and cinnamon with water. Bring to a boil; stir once. Reduce heat, cover, and simmer 40 to 50 minutes, or until rice is tender and liquid is absorbed. Fluff with fork. Serve with milk, honey, and fresh fruit.
