Dijon Chicken with Black Japonica

U.S. Black Japonica is a blend of aromatic red and rich black rice. When cooked it presents a distinct soft red and purple tint. With its bold flavour and chewy texture it is a great accompaniment to this delicious Dijon chicken.

3/4 cup mayonnaise 175 mL
1/4 cup honey 50 mL
2 tbsp Dijon mustard 25 mL
2 tsp horseradish 5 mL
6 boneless, skinless chicken breasts 6
2 cups cooked U.S. Black Japonica rice, hot 500 mL
Garnish:
1 orange, sliced into half moons 1

In bowl, mix together mayonnaise, honey, mustard and horseradish. Brush mixture on both sides of chicken. Grill chicken over medium heat for 8 minutes per side. Spoon Japonica onto warm platter. Arrange chicken on top and garnish with sliced orange.
