Dijon Chicken with Black Japonica
U.S. Black Japonica is a blend of aromatic red and rich black rice. When cooked it presents a distinct soft red and purple tint. With its bold flavour and chewy texture it is a great accompaniment to this delicious Dijon chicken.
| 3/4 cup | mayonnaise | 175 mL |
| 1/4 cup | honey | 50 mL |
| 2 tbsp | Dijon mustard | 25 mL |
| 2 tsp | horseradish | 5 mL |
| 6 | boneless, skinless chicken breasts | 6 |
| 2 cups | cooked U.S. Black Japonica rice, hot | 500 mL |
| Garnish: | ||
| 1 | orange, sliced into half moons | 1 |
In bowl, mix together mayonnaise, honey, mustard and horseradish. Brush mixture on both sides of chicken. Grill chicken over medium heat for 8 minutes per side. Spoon Japonica onto warm platter. Arrange chicken on top and garnish with sliced orange.
