Good Morning Rice Omelette

Rise and dine on a light and fluffy slice for breakfast. rice provides carb substance to this protein-packed dish, which can be jazzed up with additions such as mushrooms, cheese and green peppers.
| 2 cups | cooked U.S. rice | 500 mL |
| 1-1/3 cups | chopped cooked ham | 325 mL |
| 15 | eggs, beaten | 15 |
| 1 tsp | finely chopped parsley | 5 mL |
| 1/4 tsp | paprika | 1 mL |
| Salt and pepper | ||
| 4 tbsp | butter | 60 mL |
In large bowl, combine rice and ham; add eggs and season with
parsley, paprika, salt and pepper.
In heavy frying pan melt butter over medium
heat. Pour in egg mixture; reduce to low heat and cook until sides set and bottom
is slightly browned. Turn over and brown on other side.
Makes 8 servings.
