Simply Stir-Fried Rice
You can take a refrigerator of leftovers and combine them into a completely new meal. Fried rice is a favorite with the kids and makes for a perfect snack or tasty brown bag lunch.
| 2 | eggs beaten | 2 |
| 2 tsp | sesame oil | 10 mL |
| 2 tbsp | peanut or canola oil, divided | 25 mL |
| 1/2 cup | finely chopped onions | 125 mL |
| 3 cups | cooked U.S. rice | 750 mL |
| 1 cup | cooked meat, diced | 250 mL |
| 1 cup | fresh or frozen vegetable, thawed | 250 mL |
| Salt and pepper to taste | ||
| 1 | green onion, sliced | 1 |
| Garnish: | green onion strips |
In small bowl, whisk eggs and sesame oil. In wok or skillet over high heat, heat 1 tbsp [15 mL] oil. Add egg mixture, tilting pan to cover surface. Cook until egg is just set, about 1 minute, transfer to plate. Slice into thin strips.
Add remaining oil. When oil is very hot, add rice, stir-fry 3 minutes. Add meat, vegetables, salt and pepper; stir-fry 5 minutes. Add green onion, cook 1 minute more. Remove from heat. Gently stir in eggs. Garnish with green onion.
Makes 4 servings.
