Veggie & Rice Burgers

Meat has met its match with these rice-fortified vegetarian burgers that even carnivores will crave.

1 cup grated carrots 250 mL
3/4 cup finely chopped onion 175 mL
2 tbsp finely chopped parsley 30 mL
3 eggs, beaten 3
1/4 cup whole wheat flour 50 mL
Salt and pepper
6 cups cooked long grain brown rice 1.5 L
Vegetable oil for frying

In large bowl, combine carrots, onion, parsley and eggs. Add flour; season with salt and pepper. Mix in cooled rice until well combined. Shape into flat patties.

In large frying pan heat oil over medium-high heat. Fry patties in oil on each side until golden brown. Drain on paper towels.

Makes 10 burgers.
