Veggie & Rice Burgers
Meat has met its match with these rice-fortified vegetarian burgers that even carnivores will crave.
| 1 cup | grated carrots | 250 mL |
| 3/4 cup | finely chopped onion | 175 mL |
| 2 tbsp | finely chopped parsley | 30 mL |
| 3 | eggs, beaten | 3 |
| 1/4 cup | whole wheat flour | 50 mL |
| Salt and pepper | ||
| 6 cups | cooked long grain brown rice | 1.5 L |
| Vegetable oil for frying |
In large bowl, combine carrots, onion, parsley and eggs. Add flour; season with salt and pepper. Mix in cooled rice until well combined. Shape into flat patties.
In large frying pan heat oil over medium-high heat. Fry patties in oil on each side until golden brown. Drain on paper towels.
Makes 10 burgers.
