Ingredients

  • ½ cup (100 g) U.S.-grown long grain white rice
  • 2.5 cups (600 mL) whole milk
  • 1 cup (250 mL) whipping cream (35%)
  • ½ cup (120 mL) sweetened condensed milk
  • 3 green cardamom pods
  • ½ cup (120 g) mango puree
  • 2 tbsp (15 g) crushed pistachios + almonds
  • 1 tsp (2 g) dried rose petals, for garnish

Directions

  1. Wash the rice thoroughly and soak it in water for 20 minutes. Drain before using.
  2. In a heavy-bottomed saucepan, combine the rice, whole milk, cream and crushed cardamom pods.
  3. Bring the mixture to a gentle simmer over medium heat, then reduce to low heat and cook for 25-40 minutes, stirring frequently until the rice is tender and the mixture is thick and creamy.
  4. Stir in the condensed milk and cook for an additional 3–5 minutes.
  5. Remove from the heat and discard the cardamom pods if desired. Add some crushed pistachios and almonds.
  6. Using a hand blender, pulse a few times to partially blend the rice for a creamier texture while still retaining some rice grains.
  7. Allow the rice pudding to cool completely to room temperature.
  8. Fold in the mango puree until evenly combined.
  9. Transfer to serving bowls and chill for at least 2 hours.
  10. Garnish with crushed pistachios, almonds and dried rose petals before serving.

Notes

  • Ensure the rice pudding has cooled before adding the mango puree to prevent the dairy from curdling.
  • Alphonso mango puree works particularly well for its rich flavor and vibrant color.
  • For a more pronounced mango flavour, increase the mango puree to ¾ cup.
  • Serve chilled in small terracotta bowls or kulhads for an authentic presentation.
