Ingredients

  • 1.5 cups (278 g) U.S.-grown parboiled long-grain white rice
  • 6 boneless skinless chicken thighs
  • 2 tbsp (30 mL) olive oil
  • 2 tbsp (30 mL) butter
  • 1 small yellow onion (finely chopped)
  • 4 garlic cloves (finely chopped)
  • 3 cups (710 mL) chicken broth
  • Juice of one lemon
  • Salt and pepper for seasoning
  • 1 tbsp (14 g) dried oregano
  • 1 tbsp (14 g) garlic powder
  • 2 tsp (8 g) dried parsley
  • ½ tsp (2 g) smoked paprika
  • ½ tsp (2 g) chili flakes (optional)
  • Sliced lemon & fresh parsley for garnish

Directions

  1. Season chicken thighs with salt, pepper, dried oregano, garlic powder, dried parsley, smoked paprika, and chili flakes.
  2. Rinse rice until water runs clear.

  4. To the same pan, add onions and garlic and sauté for a few minutes.
  5. Add rinsed rice and toast for a few minutes to absorb the flavours in the pan.
  6. Pour in chicken broth and squeeze in lemon juice.
  7. Return chicken back into the pan and bring to a boil.
  8. Cover, lower heat to medium-low, and allow the dish to cook for 20 minutes (untouched).
  9. Uncover, garnish with lemon slices and fresh parsley.
  10. Serve & enjoy!
