Ingredients

  • 1 cup (340 g) U.S.-grown parboiled rice
  • 2 tbsp (30 mL) oil
  • 1 tbsp (12 g) fresh minced garlic
  • 1 lb (450 g) boneless chicken breast, cut into strips
  • ½ tsp (3 g) black pepper
  • 1 tsp (6 g) salt (adjust to taste)
  • ½ tsp (3 g) chili flakes
  • ½ tsp (3 g) oregano
  • ½ tsp (3 g) garlic powder
  • 1 tbsp (15 mL) soy sauce
  • 1 tbsp (15 mL) hot sauce
  • 1 onion, sliced
  • 1 cup (340 g) assorted bell peppers, sliced
  • Fresh cilantro, for garnish

Directions

  1. Wash rice. Boil until about 80% cooked, then drain.
  2. In a large pan, heat oil and sauté minced garlic until fragrant.
  3. Add chicken strips and cook until the colour changes.
  4. Mix in black pepper, salt, chili flakes, oregano, garlic powder, soy sauce, and hot sauce.
  5. Add onions and bell peppers, and sauté until slightly tender.
  6. Gently fold in the partially cooked rice. Cover and simmer for 10 minutes so the rice absorbs all the flavours.
  7. Garnish with fresh cilantro and serve warm.
